If you’re as obsessed with the unicorn dessert craze as I am, odds are you’ll be just as ecstatic about the Galaxy-themed desserts that keep popping up all over Instagram and Pinterest. Whether it’s galaxy cupcakes, galaxy cookies, or galaxy donuts, it’s impossible NOT to get lost in their mesmerizingly beautiful colors and starry sprinkles. Who knew science and space could be so fun and pretty?? Not to mention, DELICIOUS.

These, my dear friends, were definitely out of this world.

Or should I say, GALAXY.

Being the science enthusiast (nerd) that she is, these Galaxy Ice Cream Sandwiches were perfect for my cousin’s baby shower. It should come as no surprise that they were an absolute hit.

Like I mentioned earlier, people can’t really say no to ANY treat that has bright colors and sprinkles. And if they do, drop them. You don’t need that kind of negativity in your life…

As far as the ice cream goes, I used the no-churn method which is done with a stand mixer or an electric beater. Yep, you heard me! No ice cream maker needed! Yay! For the cheesecake ice cream, I first whipped a package of cream cheese with a can of sweetened condensed milk and a splash of vanilla until smooth. Then I added in a pint (2 cups) of heavy cream, and continued to whip the mixture until it was light and fluffy. That’s it! So, basically the easiest ice cream you will ever make in your entire life.

To create that fun galactic swirl, I separated the ice cream into four bowls and dyed each bowl separately using blue, purple, pink, and black food coloring. I used Wilton icing colors since they’re much more concentrated and vibrant. I then plopped spoonfuls of each color randomly all over the graham crackers until all of the ice cream had been used. Lastly, I used a knife to swirl the colors together.

Once the ice cream sandwiches were frozen and sliced into squares, I dipped them into some purple candy melts which I thinned out a little with some coconut oil. You could also use different-colored candy melts, or dye your own white chocolate, or even just go with a simple white, milk, or dark chocolate coating.

What I love about these ice cream sandwiches is that they don’t melt like regular ice cream. They keep their form and mostly just soften when they’ve been sitting out of the freezer for a while, making them a lot less messy. Regardless, it’s likely that the second you put these ice cream sandwiches out, they’ll be consumed in mere milliseconds.

Galaxy Ice Cream Sandwiches

These Galaxy Ice Cream Sandwiches are creamy, fluffy, and out of this world DELICIOUS!

Ingredients
  

  • 18 whole graham crackers
  • 1 (14 oz) can sweetened condensed milk
  • 8 ounces cream cheese softened
  • 1 ½ teaspoon vanilla
  • 2 cups heavy cream
  • Food coloring black, pink, blue, and purple
  • 1 (12 oz) bag purple candy melts*
  • 3 Tablespoons coconut oil
  • Sprinkles

Instructions
 

  • Line a 9x13-inch baking dish with plastic wrap, leaving a good amount of overhang on the sides. Break the graham crackers in half and arrange them on the bottom of the pan. To solve the issue of extra space on the side, use a ruler as a "receding wall" underneath the plastic wrap along with a freezer-safe item that'll fit behind it. I used five fun-sized Butterfinger chocolate bars. Click on the link for more in-depth instructions.
  • In the well-chilled bowl of a stand mixer fitted with the whisk attachment, beat together sweetened condensed milk, cream cheese, and vanilla until smooth. Add in heavy cream and beat on high until mixture is light and fluffy.
  • Divide ice cream among four bowls and dye each separately to desired shade.** Plop spoonfuls of each colored ice cream randomly over the graham crackers until you've used them all up. Use a knife to swirl the colors together, then smooth out the top. Arrange the remaining graham crackers on top. Wrap the plastic wrap over the ice cream sandwiches and freeze for at least 4 hours, preferably overnight.
  • Once ice cream sandwiches have frozen solid, remove from the pan and unwrap the plastic wrap. Using a sharp, warm knife, cut the sandwiches along the graham cracker edges, making 15 squares and 5 small rectangles. Place sandwiches on a wax paper-lined baking sheet and return to the freezer to firm up for 20 minutes.
  • Prepare a second baking sheet by lining it with wax paper. Melt the purple candy melts with the coconut oil in a microwave-safe bowl in the microwave until smooth. Pour the sprinkles into a separate bowl.
  • Working quickly in batches of 3-4, dip sandwiches halfway into candy melts, then into the sprinkles, and onto the second baking sheet in the freezer. Repeat with the rest of the sandwiches. Once the coating has set, ice cream sandwiches can be individually-wrapped in plastic wrap and stored in the freezer for up to 2 months.

Notes

*Feel free to use a different color of candy melts, or simply use white, milk, or dark chocolate.
**I dyed a bigger portion of the ice cream black, and did equal amounts of the pink, blue, and purple.
Yields: 15 full sandwiches and 5 half sandwiches.
